The Assignment:

What started as an idea at an opening party turned into an international known food and beverage program that built Sonesta’s reputation in the culinary arts. Borrowing on an Egyptian saying, loosely translated as “eyes eat first,” each plate and each display were artistically arranged to please the eyes in addition to the stomach.

The mission was to enhance every event and dining experience by creating food presentations that looked like art. The culinary displays were chef-inspired, locally grown and creatively presented. This was rolled out across a collection of 20 hotels in the US, Egypt, Latin America and the Caribbean.

Create a total revenue management strategy that analyzed all revenue streams, with enhanced tools focused on banquet (includes rooms) and catering (social). In partnership with Computer Ingenuity Associate (CIA), developed budgeting and forecasting tools that interfaced and imported historical, actuals and future business from the Micros PMS, Micros POS, IDeaS Optimization System, Delphi Sales & Catering System, DataPlus and Accounting system. The objective of this assignment was to create one repository data aggregator from the multi data source systems and utilize it for budget and forecast of guestrooms, food & beverage outlets, banquet & catering, labor costs, revenue and expenses and daily audit. The online SQL Server reporting portal created a better understand the trends and patterns to make better business decisions.

Repositioning Portfolio of Hotels and Creation of New Brand

The Assignment:

Convert fifteen Staybridge Suites and two Residence Inns to a new extended stay brand after the recent purchase of Sonesta Hotels by Reit Management and Research (RMR) and Hospitalities Properties Trust (HPT). This assignment was on an accelerated timeline of 6 months to create and implement a name that represented the brand extension as well as a way to set the extended stay product apart from the main collection in order to avoid brand confusion.
